Spiced Fusion Dutch Stamppot

A culinary upgrade to the classic Dutch mashed potato dish. We use an Indian tempering technique (tadka) to infuse the butter with warming spices.

Spiced Fusion Dutch Stamppot

A stamppot is only as good as its foundation: perfectly steamed, floury potatoes. In this recipe, we elevate the classic Dutch kale mash by applying an Indian culinary technique. By heating the butter and infusing it with spices (a tadka), the fat-soluble flavor compounds are optimally released.

Instructions

1. Cooking the Foundation

Peel the potatoes and cut them into equal 4-centimeter (1.5-inch) chunks. Place them in a large pot with a generous pinch of sea salt and cover with cold water just until submerged. Bring to a boil and simmer gently for exactly 20 minutes until tender when pierced with a fork.

2. The Secret: Steam-Drying

Carefully drain the potatoes in a colander. Return them to the empty pot and place it back on low heat for 30 seconds to let the residual moisture evaporate (shake the pot gently). Remove from the heat, place a clean kitchen towel over the pot, and cover with the lid. Let it rest for 5 minutes. This draws out steam and ensures an ultra-fluffy, lump-free mash.

3. The Spiced Butter (Tadka)

While the potatoes are resting, melt the butter in a skillet over medium-low heat. Add the sliced red onions and sauté for 8 to 10 minutes until soft and lightly caramelized. Add the Garam Masala and mustard seeds. Toast the spices while stirring continuously for 1 minute. Be careful not to burn the spices; they should simply become highly aromatic. Remove from the heat immediately.

4. Mashing and Mixing

Thoroughly mash the steam-dried potatoes. Pour in the warm milk in a thin stream while continuing to mash until you reach a smooth, creamy consistency. Now, fold the raw kale into the hot mash in three batches. (The residual heat from the potatoes cooks the kale perfectly in just a few minutes, keeping it bright green and retaining its vitamins).

5. Plating

Finally, pour the hot, spiced onion-butter mixture directly over the stamppot and fold it in gently with a wooden spoon. Season generously with freshly ground black pepper and salt. Serve immediately.
